Whoopie Pies

A whoopie pie is a cross between a soft biscuit, a cake and a pie. It is made up of two round pieces of cake-like biscuits (cookies) which are sandwiched together with a sweet, creamy filling. Other names have included hucklebucks and BFOs (Big Fat Oreos) ….Originally an American Amish community tradition.

Whoopie PiesIngredients

  • 150g Gluten-Free Flour Mix A
  • 1 tsp unsweetened cocoa powder
  • ½ tsp Gluten-Free baking powder
  • ¼ tsp xanthan gum
  • 2 tbsp walnuts, chopped
  • 50g margarine (solid vegetable shortening)
  • 2 tsp Glycerine
  • 85 g dark brown sugar, firmly packed
  • 1 small egg
  • 125mls milk

for the Filling

  • 150mls double (heavy) cream
  • 1 tbsp maple syrup

Method

  1. Preheat the oven. 180°C / 350°F / Gas Mark 4.
  2. Sift the flour, cocoa, baking powder and xanthan gum. Stir in the walnuts.
  3. Cream the margarine (shortening) sugar and egg.
  4. Mix the flour mixture into the creamed mixture, alternating with the milk, and beat until smooth. Add a little more or less milk to get the mixture to a soft consistency.
  5. Bake for about 15 minutes until firm. Remove and cool.
  6. Make the filling: whip the cream until soft and thick. Stir in the maple syrup.
  7. Spread over one flat side of half a whoopee and sandwich with the other half.
