
Quick Turkey Bolognese
Nice twist on a real classic, turkey is very good for you, being very low in fat and is delicious alternative to beef or lamb.

- 2 tbsp olive oil
- ½ small onion, peeled and very finely chopped
- 1 small stick of celery, very finely chopped
- 1 medium carrot, peeled and very finely chopped
- 1 clove of garlic, finely chopped
- pinch dried oregano
- 250g turkey mince
- 1 tbsp cornflour
- 1 tbsp tomato puree
- 205g or ½ can, chopped tomatoes in juice
- ½ gluten free chicken stock cube
- freshly milled black pepper
- 125g gluten free spaghetti
- ½ tbsp cornflour mixed with 1½ tbsp cold water
Method
- Heat the olive oil and add the onions, celery, carrot, garlic and oregano and cook for 5 minutes to soften.
- Add the mince and break up with a wooden spoon cook for about 10 minutes.
- Add the tomato paste and chopped tomatoes in juice. Then using the can, refill with water and add to the pan and stir well.
- Next add a little pepper, bring the pan to the boil and then simmer for 30-35 minutes.
- Mix the cornflour with a little cold water, then stir in enough to just thicken the sauce.
- To serve spoon over cooked spaghetti.
