Potato Flour

As you might expect potato flour has a distinctive potato flavour and a heavy texture. It is great for blending with other flours and a little goes a long way. It’s generally made from cooked potatoes, then dried and ground. Potato flour should not be confused with potato starch, which is a different product and is made from dried raw potato. I think it absorbs more moisture than potato flour. Will give a nice feel to cooked items, and a shortness to pastry, whilst absorbing and retaining moisture well.
