Hot Smoked Mackerel Blinis With Rocket

Another example of a gluten free dish that is as good if not better than the original version.

Hot Smoked BlinisIngredients

  • 140g Gluten-Free Flour Mix B
  • 2pinches cream of tartar
  • 2pinches bicarbonate of soda
  • salt
  • freshly milled black pepper
  • 1 medium egg, lightly beaten
  • 1tbsp wholegrain mustard
  • 8tbsp milk, approximately
  • 125g fillet hot smoked mackerel or salmon
  • 4 to 5tbsp gluten free mayonnaise
  • 4tbsp roughly chopped rocket
  • 10 cherry tomatoes, cut into quarters


  1. Place the flour, cream of tartar, bicarbonate of soda and seasoning into a bowl and mix well.
  2. Add the egg and mustard and mix well, and then add enough milk until you have a slightly thick batter, so it holds its own weight, like thick cream.
  3. Pre heat a non stick frying pan with a couple of teaspoons of oil.
  4. Spoon in the mixture in teaspoon sized mounds and cook for 1 minute.
  5. Cook until the top starts to bubble and is just set.
  6. Flip over carefully and cook for a further minute, then cool.
  7. Break the mackerel up in a small bowl, not too small though.
  8. Add the mayonnaise, rocket and finally the tomatoes.
  9. Carefully fold together, so the tomatoes do not break up.
  10. Pile the mixture onto the small scones and serve.
