Gluten Free Golden Christmas Pudding

Light Golden Christmas PuddingIngredients

  • 110g raisins
  • 75g sultanas
  • 1 small carrot, grated
  • 1 small apple, grated
  • 175mls cider
  • 50g runny honey
  • 50g cornflour (gluten free)
  • 100g rice flour
  • 50g soft brown sugar
  • 50g chopped dried figs
  • 50g pine nuts
  • 50g chopped dates
  • 50g currants
  • 50g olive oil
  • 50g candied fruits chopped (optional)
  • 35g flaked almonds
  • 2 tsp mixed spice
  • 2 medium eggs beaten
  • salt pinch or two


  1. Soak all the fruit and carrot in the cider overnight.
  2. Next day mix well then add the sugar, pinenuts, honey, flours, olive oil, candied fruit, almonds, spice, egg and finally salt.
  3. Mix well and pack into a 2lb pudding basin.
  4. Cover with greaseproof paper and foil and secure well.
  5. Steam for 4 hours.
  6. Remove and cool.
