Chestnut flour

Chestnut flour has a mildly nutty flavour and a very fine texture. It is fairly difficult to get hold of, but you can buy it on-line and at certain health food stores but it can be expensive. A cheaper alternative is fine Polenta. Chestnut flour is very high in starch and is quite floury when milled, so adding this to other starch and protein packed flours will give you a nice end result. Good for adding background flavour to biscuits and breads.
